Shortbread Biscuits

Assalaamu alaykum

Today I'd like to show you how to make Shortbread Biscuits.
These are very nice to have with a cup of tea.
Perhaps you could make them for Iftar inshaAllah.

Ingredients:
110g buttter (at room temperature)
50g caster sugar
175g plain flour (sifted)


Preheat your oven to Gas Mark 2, 300F, 150C.

Put all the ingredients into a bowl and rub together until
a breadcrumb like mixture is left.

 Squeeze the mixture together to form a big ball of dough like below.


Sprinkle caster sugar on to your work surface,
then roll out your dough over it.

Cut out circle using a fluted cutter or you could
use any shaped cutter if you prefer.

 Lay out the biscuits on a baking sheet, prick each
biscuit with a fork. Bake on a highish shelf in the oven
for 30 mins.


Cool the biscuits on a wire rack, dust them with caster sugar
and store in an airtight tin, to keep them crisp. 


Serve with tea and enjoy!

Wa alaikum assalaam,

wa iyaaki!
You could also add a heaped teaspoon of cocoa powder
to the mixture for something different.
